Kwanzaa, a holiday created by Dr. Maulana Karenga, was first celebrated on December 26, 1966. The holiday is based on the "first fruits" celebrations of classical African cultures and is celebrated by millions of people worldwide.Whether you celebrate or not, why not try this hearty vegetable stew and start a little Kwanzaa tradition of your own? And after all that pie over the past couple of days, your body will welcome a serving or two of hearty veggies.
Kwanzaa Vegetarian Stew
What you will need:
4 small kohlrabies, peeled and cut into chunks (parsnips may be substituted, if desired)
2 medium carrots sliced
1 large onion, chopped
1 - 16 oz can stewed tomatoes
1/4 cup raisins, golden
2 sweet potatoes, peeled and cut into chunks
2 zucchini, sliced thick
1 Tbl salt
1 tsp ground coriander
1/2 tsp ground turmeric
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground cumin
1/2 tsp cardamom
3 cups water
What to do:
- Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes.
- Serve with couscous separately, if desired.
